Home Made Spicy Italian Sausage



Ingredients

1 lb. ground pork 

8 grams kosher salt*

3/4 teaspoon fennel seeds, toasted

1/2 teaspoon ground black pepper

1/2 teaspoons cayenne pepper

2 teaspoons paprika (original recipe calls for 1/2 teaspoon)

1 teaspoon smoked paprika (original recipe calls for 1/4 teaspoon)

1 teaspoon crushed red pepper flakes (original recipe calls for 1/4 teaspoon)

2 teaspoons finely grated garlic

3 tablespoons dry red wine

2 tablespoons tomato paste (not in the original recipe)


Directions

Combine all dry ingredients in a small bowl.   Add dry ingredients, tomato paste and wine into the ground meat and mix well. 

Make patties or use in other recipes.
