Salsa Blanca de Lita Rosa
Ingredients
50 grams butter
50 grams flour
700 ml milk, cold
1/2 teaspoon salt
1/16 teaspoon white pepper
Freshly grated nutmeg, to taste
Fresh thyme, optional
Parmesan or cheddar cheese, optional

Directions
1. Melt butter in a medium saucepan over low-medium heat. Wait until it starts singing and watch carefully at this point because it can turn brown and you'll have to start over. Stir in the flour and whisk with a wooden spoon or silicone spatula to make a roux. Stir until the flour cooks to a light, golden, sandy color, and smells like pie pastry.
2. Add a third of the milk and stir until smooth. Add the second and third parts of milk stirring well between each addition. Strain the mix to remove any lumps.
3. Season with salt, pepper, and nutmeg. Add optional ingredients.
