Sautéed Mushrooms, Onions, and Jalapeños

 






Ingredients

Mushrooms

16 oz mushrooms, stems removed and quartered

1 tablespoon olive oil 

1/2 small onion, julienned

3 big garlic cloves, minced 

1/2 jalapeño chile, finely chopped

Salt, to taste

Ground pepper, to taste

To Serve

Warm tortillas

Guacamole

Sliced lime

Cotija cheese, crumbled

Salsa, your favorite


Directions

1. Preheat a skillet on medium-high heat. Add mushrooms and sprinkle one generous pinch of salt all around. Cook, undisturbed until water evaporates. Remove from pan and set aside. 

2. Add olive oil to the now empty skillet and reduce heat to low-medium. Add onions, add another generous pinch of salt all around, and cook until onions begin to caramelize, three to four minutes. Add the jalapeños and cook for about a minute. Add the minced garlic and cook until fragrant. Add the mushrooms, stir for a minute and set aside until ready to serve. 

3. Add pepper and correct seasoning, if needed, by adding additional salt or finely chopped jalapeños, as needed. 


Serving

Use as a side or taco filling over guacamole, lime, and salsa of your choice. Enjoy!
