Chicken Provencal with Mashed Potatoes and Fresh Crusty Bread

 












Ingredients

2 pounds chicken thighs

Kosher salt, to taste

Freshly ground black pepper, to taste

3 tablespoons olive oil

4 medium shallots, halved or quartered

6 garlic cloves, peeled

1 tablespoon flour

1 cup white wine

1/2 cup water

1-1/2 teaspoon chicken bouillon powder

2 teaspoons herbs de Provence, or fresh thyme and sage leaves

3/4 cup pitted Kalamata olives 

3/4 cup pitted green olives

2 dates

1 tablespoon capers, lemon wedges, or artichokes for acidity


To Serve

Mashed potatoes 

Fresh crusty bread
