Green Peas With Pancetta

 















Ingredients
2 packages, 10 ounces each, of frozen green peas
10 ounces of pancetta or thick-cut bacon, cut into 1/2" squares 
2 shallots, optional
2 cloves garlic of garlic, optional
1 or 2 sprigs of fresh thyme
1/4 teaspoon powdered chicken bouillon 
Salt and pepper, to taste

Directions
1.  Microwave the frozen peas until they begin to soften. Set aside. 
2. Add the bacon or pancetta to a large skillet over medium heat. Cook until it begins to caramelize. Add the green peas and stir to combine. Add powdered chicken bouillon, and pepper. Taste for seasonings adding salt and pepper to taste.   

Notes
Optional: Add one julienned shallot, and one clove garlic, minced.
