Mexican Vegetables Soup Sopa de Verduras

 












Ingredients

Mami's Ingredients
1/2 white onion, chopped
3 carrots, diced
3 Mexican zucchini, diced
1 can of corn
1 tablespoon vegetable oil
1 small can of Hunts tomato puree
4 cups of filtered water
1 tablespoon powdered chicken bouillon
1 serrano chile
Salt and pepper, to taste

Garnish
Cubes of Oaxaca, quesadilla or other melty cheese
Limes 

Optional
1 potato (about 3/4 cup), cut into small cubes
1 chayote (about 3/4 cup), cut into small cubes
Green beans (about 3/4 cup), cubes
Spinach (about 3/4 cup), julienned
3 cilantro sprigs

Notes
  • You can substitute the can of tomato sauce with 3 tomatoes, blended with 1/2 white onion and 1 garlic clove.
