Bran Nuts and Dry Fruit Muffins











Ingredients

300 grams (2 cups) Kellogg's All-Bran, Original cereal
1-1/4 cups milk
1/4 cup extra light olive oil
1 egg
185 grams (1-1/4 cups) all-purpose flour
100 grams (1/2 cup) sugar
1 tablespoon baking powder
1/4 teaspoon salt
1/4 cup chopped pecans
1/4 cup chopped walnuts
1/4 cup cranberries
1/8 cup raisins or sultans

Directions

1. In a large mixing bowl, combine cereal and milk. Set aside for a 5 few minutes to allow the cereal to soften. 

2. In a medium bowl, stir together flour, sugar, baking powder, and salt. Set aside.

3. Beat together the oil and egg and incorporate into the cereal mixture. 

4. Add the nuts and dry fruit and combine well. 

5. Add dry ingredients, stirring only until combined. If necessary, add 1 tablespoon of milk to allow the mix to absorb all the flour.  

6. Portion evenly into twelve 2 1/2-inch muffin pan cups coated with cooking spray.

7. Bake at 400 degrees Fahrenheit for about 20 minutes or until golden brown. Cool for 10 minutes. Serve warm.
