Shrimp Scampi (Shrimp Shrimp)

Ingredients
2 tablespoons butter
2 tablespoons extra-virgin olive oil
4 garlic cloves, minced
1/2 cup dry white wine
3/4 teaspoon kosher salt, or to taste
1/4 teaspoon crushed red pepper flakes, or to taste
Freshly ground black pepper
1 pound large (13/15 per pound) or extra-large (8/12 per pound) raw shrimp, deveined, shelled, and tails cut off. Alternatively, frozen pre-cooked large shrimp.  
1/4 cup chopped parsley
Freshly squeezed juice of a lemon

To Serve
Lemon slices
Roasted Broccoli
Rice Pilaf
Crusty bread

Directions
In a large skillet, melt butter with olive oil. Add garlic and sauté until fragrant, about 1 minute. Add wine or broth, salt, red pepper flakes and plenty of black pepper and bring to a simmer. Let wine reduce by half, about 2 minutes.

Step 2
Add shrimp and sauté until they just turn pink, 2 to 4 minutes depending upon their size. If using pre-cooked shrimp, cook until warmed through. Stir in the parsley and lemon juice and serve over pasta or accompanied by crusty bread.

Prep the Shrimp (if raw)
  • If using raw shrimp, ensure they are deveined, shelled, and the tails cut off. Pat them dry with a paper towel.

Make the Sauce
  • In a large skillet, heat the olive oil and butter over medium heat until the butter is melted and the mixture is hot.
  • Add the minced garlic and cook, stirring frequently, until fragrant but not browned (about 1-2 minutes). 
  • Pour in the white wine and bring to a simmer. Let the wine reduce by half (about 2-3 minutes) to concentrate the flavor.
  • Add the kosher salt, crushed red pepper flakes, and freshly ground black pepper to taste. Stir to combine all the ingredients well.
Add the Shrimp
  • If using raw shrimp, add them to the skillet and cook until they start to turn pink (about 2-3 minutes per side). Be careful not to overcook them.
  • If using pre-cooked shrimp, add them to the skillet and cook until they are heated through (about 1-2 minutes), just enough to warm them without overcooking.

Finish the Sauce

  • Once the shrimp are cooked, add the freshly squeezed lemon juice and chopped parsley. Stir well to combine and let the flavors meld together for about 1 minute.

Serve

  • Remove the skillet from the heat. Taste and adjust seasoning if necessary. 
  • Serve immediately, garnished with additional parsley and lemon wedges. 
  • Accompany with roasted broccoli, rice pilaf, and warm crusty bread.
