Monkey Bread





Caramel
1 cup sugar
1/4 cup water
76 grams (1/3 cup) cold butter, cubed
1/2 cup heavy whipping cream

Divide in half
Half 1
1/4 teaspoon salt

Half 2
1/4 teaspoon vanilla
Directions

Caramel Directions
In a medium saucepan add sugar and water, make sure the sugar is fully coated with the water, heat it the over-medium low until the sugar is dissolved. 

Lightly char the cinnamon stick using a kitchen torch or on your stovetop, and add it to the sugar, let it simmer for 5 to 8 min, (do not stir) or until the sugar turns golden brown.

Add the butter and begin whisking immediately, once the butter is melted and emulsified, whisk in your heavy cream until all of it is added. Remove from the heat and whisk in the rum. 

Take the cinnamon stick out, place it into a heat-proof container, add the caramel. Allow cooling to room temperature.

  2. Orange Juice + Vanilla Extract – Adds a hint of sweetness and complexity.

  1. Orange Juice + Cinnamon Stick Infusion – Simmer orange juice with cinnamon for a spiced, aromatic touch.
  2. Orange Zest + Clove or Nutmeg – Adds complexity and warmth, like aged rum.

  1. Orange Marmalade + Water – A small spoonful of marmalade mixed with water adds depth and a slightly bitter-sweet profile.
  2. Caramelized Orange Juice – Gently heat orange juice until slightly reduced for a richer, deeper citrus flavor.
