Beef Cubes with Garlic Noodles – Stress-Free Version (Serves 4–6)

Ingredients

Beef

  • 2 lbs cubes (tenderloin, teres major, ribeye, or sirloin)

Marinade

  • 3 tbsp soy sauce

  • 2 tsp oyster sauce

  • 1 tsp fish sauce (optional)

  • 2 tsp brown sugar

  • 2 tbsp neutral oil

  • 1 tsp black pepper

Noodles

  • 1 lb dry lo mein noodles

Noodle Sauce

  • 1 cup butter

  • 40 g minced garlic (10–12 cloves)

  • 2 tbsp Maggi seasoning

  • 2 tsp soy sauce

  • 2 tsp oyster sauce

  • 1 tsp fish sauce (optional)

  • ¼ tsp sugar

  • Pinch kosher salt

  • 100 g Parmesan cheese, shredded

  • 6 scallions, thinly sliced (white and green separated)

Beef Sauce

  • 3 tbsp soy sauce

  • 2 tbsp oyster sauce

  • 2 tbsp rice vinegar or lime juice

  • 2 tsp sugar

  • 2 tsp hoisin sauce (optional)

Other

  • 1 large yellow onion, sliced into petals

  • 4 tbsp clarified butter (from Step 1)

  • Sesame oil (to finish)

Sides

  • 10 oz cherry tomatoes, halved

  • 1 head ice lettuce, washed, dried, and cut into bite-size pieces


Stress-Free Directions

Step 1 – Clarify Butter

  • Melt 1 cup butter very gently.

  • Skim off foam, pour golden liquid into bowl, leaving milk solids.

  • Set aside for searing later.

Step 2 – Prep Beef & Sides

  • Pat beef cubes dry.

  • Toss with marinade ingredients.

  • Rest 20–30 minutes.

  • Meanwhile: wash, dry, and cut lettuce into bite-size pieces. Halve cherry tomatoes. Set both aside.

Step 3 – Cook & Hold the Noodles

  • Boil noodles until just shy of al dente. Reserve ½ cup cooking water, then drain.

  • Toss with a drizzle of oil, cover, and set aside.

Step 4 – Make Noodle Sauce (ahead)

  • In a skillet, melt butter over medium heat.

  • Add garlic, sauté 30–60 sec until fragrant.

  • Stir in Maggi, soy, oyster, fish sauce (opt), sugar, salt.

  • Turn off heat, leave sauce in skillet.

Step 5 – Sear Beef

  • Heat cast iron or stainless skillet until just smoking.

  • Add 4 tbsp clarified butter.

  • Sear beef cubes in batches 1–2 min per side until browned, medium-rare inside.

  • Transfer to a plate to rest.

Step 6 – Aromatics & Beef Sauce

  • In the same pan, sauté onion until golden.

  • Add garlic, stir 20–30 sec.

  • Pour in beef sauce mixture, let bubble briefly.

  • Return beef, toss quickly to coat.

  • Finish with sesame oil + pepper.

Step 7 – Finish Noodles

  • Reheat noodle sauce gently.

  • Toss in noodles, adding a splash of reserved water if dry.

  • Stir in Parmesan and garnish with scallions.

Step 8 – Assemble & Serve

  • Plate lettuce and scatter halved cherry tomatoes around the edges as a fresh side.

  • Nest noodles in the center.

  • Top with beef cubes + onions.

  • Spoon sauce over beef and noodles.
