Beef Cubes with Garlic Noodles


Ingredients (Serves 2–3)

Beef & Marinade

1 lb beef cubes (tenderloin, teres major, ribeye, or sirloin)

1½ tbsp soy sauce (tamari if gluten-free)
1 tsp oyster sauce (or mushroom version if vegetarian)
½ tsp fish sauce (optional)
1 tsp brown sugar (or palm sugar)
1 tbsp neutral oil (avocado/canola)
½ tsp cracked black pepper

For Stir-Fry

½ cup unsalted butter (to clarify → yields ~2 tbsp clarified butter)
½ large yellow onion, sliced into petals
3 cloves garlic, finely minced
1–2 tsp sesame oil (to finish)

Sauce (combine in bowl)

1½ tbsp soy sauce
1 tbsp oyster sauce
1 tbsp rice vinegar or lime juice
1 tsp sugar
1 tsp hoisin sauce (optional, for sweetness & body)
1 tsp cornstarch + 2 tbsp water (slurry, optional for glossy finish)

Garlic Noodles

1/2 pound fresh lo mein noodles, or italian spaghetti
114 g (1/2 cup) unsalted butter, cut into 4 pieces
2 teaspoons garlic powder
20 g minced garlic (about 5 or 6 cloves, depending on the size)
1 tablespoon Maggi Seasoning
½ teaspoon kosher salt
⅛ teaspoon sugar
50 g (¾ cup, about 1½ ounces) Parmesan cheese, shredded
3 scallions, white and green sides separated, sliced thin


Instructions

Step 1: Clarify the Butter

  1. Melt butter in a small saucepan over very low heat.

  2. Skim off white foam as it rises.

  3. Pour the clear golden liquid into a heatproof bowl, leaving the milky solids behind.
    👉 Use this clarified butter for high-heat searing.


Step 2: Prep the Beef

  1. Cut beef into 1½–2 inch cubes.

  2. Pat dry thoroughly.

  3. Toss with soy, oyster, fish sauce, sugar, oil, and pepper.

  4. Marinate 20–30 minutes max.


Step 3: Cook the Garlic Noodles

  1. Boil noodles until just al dente, reserve ¼ cup cooking water, then drain.

  2. In a skillet over medium heat, melt butter.

  3. Add minced garlic, sauté gently until fragrant (30–60 sec).

  4. Stir in oyster sauce, soy sauce, fish sauce, sugar, and Maggi seasoning.

  5. Toss noodles in the sauce, adding a splash of cooking water if too dry.

  6. Remove from heat, stir in Parmesan (if using).

  7. Garnish with scallions, keep warm.


Step 4: Sear the Beef

  1. Heat a cast iron or stainless skillet until just smoking.

  2. Add 2 tbsp clarified butter.

  3. Lay beef cubes in a single layer.

  4. Sear 1–2 min per side until browned, but medium-rare inside.

  5. Remove beef to a plate to rest.


Step 5: Aromatics & Sauce

  1. In the same pan, add onions and sauté until golden at the edges.

  2. Add garlic, stir 20–30 sec.

  3. Pour in the sauce mixture, let it bubble (thicken if using slurry).

  4. Return beef to the pan, toss quickly to coat.

  5. Finish with sesame oil and extra black pepper.


Step 6: Plate & Serve

  1. Arrange a nest of garlic noodles on each plate.

  2. Top with beef cubes and onions.

  3. Spoon extra sauce over the noodles and beef.

  4. Serve immediately.
