Traditional Pad Thai Sauce

Yield: 1 cup

Ingredients

  • 1/3cup tamarind paste or tamarind concentrate
  • 1/3 cup fish sauce
  • 1/3 cup palm sugar, packed
  • 2 tablespoons water
  • 1 tablespoon rice vinegar
  • 1–2 teaspoons chili garlic sauce, optional

Directions

  1. Combine the tamarind paste, fish sauce, palm sugar, and water in a small saucepan.
  2. Place over medium-low heat and stir until the palm sugar has completely dissolved.
  3. Add the rice vinegar and Thai chili flakes, if using.
  4. Simmer gently for 2–3 minutes, stirring occasionally, until the sauce is slightly thickened.
  5. Remove from the heat and allow to cool.

The finished sauce should have a balanced sweet, sour, salty, and savory flavor, with the tamarind providing the characteristic sourness of traditional Pad Thai.

Storage: Refrigerate in a covered container for up to 1–2 weeks. Stir before using.
