Extra-Crunchy, Flavor-Packed Chicken Schnitzel
The secret to an outstanding chicken schnitzel is thin, juicy chicken, deeply seasoned breadcrumbs, a little Parmesan, and a crisp double-textured coating. This version has a savory, garlicky, slightly smoky crust with plenty of crunch in every bite.

Ingredients
For the chicken
2 large boneless, skinless chicken breasts
1 tsp kosher salt
½ tsp freshly ground black pepper
½ tsp smoked paprika
¼ tsp cayenne pepper, optional
For the extra-flavorful crust
Bowl 1 — Flour
½ cup all-purpose flour
½ tsp garlic powder
¼ tsp black pepper
Bowl 2 — Egg wash
2 large eggs
1 tbsp Dijon mustard
1 tbsp water
Bowl 3 — Crunchy coating
1 cup panko breadcrumbs
½ cup regular fine breadcrumbs
½ cup finely grated Parmesan
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
1 tsp dried oregano
½ tsp mustard powder, optional
½ tsp freshly ground black pepper
¼ tsp cayenne pepper
1 tsp lemon zest
You’ll also need about ¾ cup neutral frying oil, such as canola, sunflower, or avocado oil, plus lemon wedges and chopped parsley for serving.
Instructions
1. Pound the chicken thin
Slice each breast horizontally into two cutlets. Place between sheets of parchment or plastic wrap and pound to about ¼ inch thick. Pat completely dry with paper towels, then season both sides with salt, pepper, smoked paprika, and cayenne.
2. Build the flavorful coating
Mix the flour ingredients in one bowl, whisk the eggs with Dijon and water in another, and thoroughly combine all the crust ingredients in a third. Press a little of the panko between your fingers to break up overly large pieces, but keep most of it coarse.
3. Bread for maximum crunch
Coat each cutlet in flour, shaking off the excess. Dip into the egg mixture, letting excess drip off. Press firmly into the seasoned breadcrumbs on both sides and along the edges.
Crunch trick: Let the breaded cutlets rest on a wire rack for 5–10 minutes. This helps the coating adhere instead of falling off in the pan.
4. Fry until deeply golden
Pour oil into a large skillet to a depth of roughly ¼ inch. Heat to 350°F (175°C). Fry in batches for about 2–3 minutes per side, depending on thickness, until the crust is deep golden and the chicken reaches 165°F internally.
Don't crowd the pan: too many cutlets lower the oil temperature and make the crust greasy.
5. Keep the crust crispy
Transfer directly to a wire rack, not a flat plate or paper towels. Sprinkle lightly with flaky salt while hot. Finish with fresh lemon juice and parsley just before serving.
The five secrets to an exceptionally crunchy crust
1. Use both panko and fine breadcrumbs.
Panko creates the jagged, airy crunch; fine breadcrumbs fill the gaps and create a more complete crust.
2. Season the breadcrumbs generously.
Garlic, onion, smoked paprika, oregano, Parmesan, lemon zest, and black pepper deliver flavor throughout the crust instead of just on the surface of the chicken.
3. Use Dijon in the egg wash.
It adds tangy depth and helps make the coating more savory without making the schnitzel taste strongly of mustard.
4. Maintain the right oil temperature.
Aim for 340–350°F during frying. Too cool means oily breading; too hot means burnt breadcrumbs before the chicken cooks through.
5. Never cover freshly fried schnitzel.
Trapped steam softens the crust. Keep cooked cutlets on a wire rack in a 200°F oven while finishing the remaining batches.
What to serve with it
German potato salad
Tangy and savory, a classic pairing.
Buttery mashed potatoes
Rich, creamy contrast to the crisp crust.
Lemony arugula salad
Freshness that cuts through the fried coating.
Garlic-lemon aioli
A punchy dip for extra flavor.
My recommendation: Don't skip the Parmesan or lemon zest in the breadcrumbs. Together with the garlic, smoked paprika, and Dijon, they give the crust a rich, savory flavor that stands out even before you add lemon juice at the table.
